Buffalo Chicken Flatbread

Mmmmmm Pizza! One of my favorite meals ever! If you are trying to lose weight, you can’t have it. But, you know what you can have….. Flatbread! Which is basically the same thing.

So my recipe today is a Buffalo Chicken Flatbread! The recipe inspiration is Donatos Hot Chicken Pizza, which is my favorite pizza ever. Seriously if you haven’t tried it you need to, today! This certainly isn’t the same as theirs, but it’s really yummy and has like a ton less calories. Like one serving is the whole pizza. Yummy!

For this recipe, I used Lavash bread. It’s really not bread at all, more like a fancy tortilla. Each piece is only 110 calories, so it makes the perfect base for a flat bread recipe. You can honestly get fancy and make up your own recipes easily. We like to do that regularly and they always turn out super good!

When I made this, I was out of pizza sauce and just used pasta sauce. It still works fine, but definitely choose pizza sauce if you can.

Using low fat cheese is not necessary, and it would taste better if you didn’t, but for the sake of the flatbread being low calorie, I always do.

Make sure you don’t put the pickles on until after you bake it! Ain’t nobody got time for soggy pickles.

Oh, and make sure you use dill pickles. Sweet pickles would not match the flavor profile.

If you want a fine drizzle like mine, make sure you don’t drizzle right from the ranch bottle! I like to use a small plastic bag and cut a small hole in it.

Hot Chicken Flatbread

Hot Chicken Flatbread

Cook Time: 5 minutes
Total Time: 15 minutes

Ingredients

  • 1 Lavash bread
  • 2 Tablespoons pizza sauce
  • 1/2 Cup fat free mozzarella
  • 2 oz cooked chicken cut into small pieces
  • 1 teaspoon red hot
  • 1 Pickle, sliced
  • 1 Tablespoon low fat ranch

Instructions

  1. Mix the chicken and the red hot together.
  2. Spread the pizza sauce onto the Lavash bread.
  3. Top with the cheese and chicken.
  4. Bake at 450 degrees for 3-5 minutes or until the crust starts to brown and the cheese is melted.
  5. Top with the sliced pickles and drizzle with ranch.
  6. Enjoy!

Notes

For the ranch drizzle, I like to use a snack size plastic bag with a small hole cut in it. Straight from the bottle makes a super thick drizzle.
