I’m a huge sucker for protein bars. They’re just so easy to grab on the go, and they taste so good. Some of the store bought ones are a little sketchy as far as the ingredients go. When I can’t pronounce the ingredients in the food I’m eating, it does make me think twice.
Making your own bars from scratch is really not as hard as you’d think, and its so rewarding! I love the satisfaction of knowing that I made the food that I’m eating, and it’s actually good! Not to mention, you also know exactly what you are putting in your body!
In this recipe, I actually have you make your own almond butter. It’s really not hard, just takes a few minutes in a food processor. If you’d rather use almond butter that’s already made, that’s totally fine.

Almond Protein Bars
Ingredients
- 1 cup oats
- 1 cup almonds
- 1/3 cup vanilla protein
- 1/3 cup maple syrup
- 1 teaspoon vanilla
- 2 ounces chocolate (optional)
- 1/4 cup chopped almonds (optional)
Instructions
- In a food processor, blend the oats to be a flour consistency. Put the oat flour in a bowl.
- Blend the almond in the food processor until the mixer starts to get sticky. You are making your own almond butter, so be patient, it will take a few minutes. Scape down the sides of the bowl at least once. Add the almonds to your oat flour.
- Add the protein, syrup and vanilla in with the flour mixture and combine. You may need to mix with your hands, it's a pretty thick mixture.
- Press mixture into a greased 8x8 pan and refrigerate for 30-60 minutes.
- If youre adding the toppings, melt your chocolate in the microwave and then put in it a ziplock bag and cut a small hole in one of the ends. Drizzle over the bars.
- Sprinkle the chopped almonds on top and cut into 8-10 bars.
- Enjoy!!!
Notes
Wrap your bars individually in plastic wrap for easier storage.
